Grilled Chicken Salad with Quinoa and Veggies


This simple and nutritious meal provides a good balance of protein, healthy fats, and fibre. Adjust the ingredients based on your preferences and dietary needs. Enjoy your delicious and healthy grilled chicken salad!


Ingredients:


• 2 boneless, skinless chicken breasts

• 1 cup quinoa

• 2 cups mixed salad greens (spinach, arugula, or your choice)

• 1 cup cherry tomatoes, halved.

• 1 cucumber, diced.

• 1 bell pepper, diced (any color)

• 1/4 cup red onion finely chopped.

• 2 tablespoons olive oil

• 1 lemon, juiced.

• Salt and pepper to taste

Optional: Fresh herbs (such as parsley or cilantro) for garnish



Instructions:


1. Prepare the Quinoa:

2. Rinse the quinoa under cold water.

3. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water.

4. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and water is absorbed.

5. Fluff the quinoa with a fork and let it cool.

6. Grill the Chicken:

7. Season the chicken breasts with salt and pepper.

8. Preheat a grill or grill pan over medium-high heat.

9. Grill the chicken for about 6-7 minutes per side or until fully cooked (internal temperature of 165°F or 74°C).

10. Let the chicken rest for a few minutes before slicing it into strips.

11. Assemble the Salad:

In a large bowl, combine the cooked quinoa, salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.


Make the Dressing:

• In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.


Add the sliced grilled chicken to the salad.

Drizzle the dressing over the salad and toss everything together until well coated.
