Turkey and Sweet Potato Chili:



  • 1 lb ground turkey

  • 2 sweet potatoes, peeled and diced

  • 1 can (15 oz) diced tomatoes

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp chili powder

  • 1 tsp cumin

  • Salt and pepper to taste

  • Optional toppings: chopped cilantro, shredded cheese, sour cream

Directions:

  • Brown the ground turkey in a large pot over medium heat.

  • Add the sweet potatoes, diced tomatoes, black beans, onion, garlic, chili powder, and cumin. Stir to combine.

  • Season with salt and pepper to taste.

  • Bring the chili to a simmer and cook for 20-25 minutes or until the sweet potatoes are tender.

  • Serve hot, topped with optional toppings if desired.
